Sharing Recipe for Tomato Pie

Tomato Pie Ingredients


1 frozen deep dish pie shell
2 to three vine ripe tomatoes
1 ½ cups Hellmann’s’ Mayonnaise
1 ½ cups parmesan cheese
Chopped fresh sweet basil (6 to 8 leaves)
2 chopped green onions (reserve a table spoon of green onion for garnish)
1 clove chopped garlic
Fresh ground pepper to taste
NO SALT NEEDED Parmesan is salty enough

Optional ingredients: 1/2 cup freshly browned bacon bits, 1/2 cup caramelized Vidalia Onion. Please feel free to suggest additional ingredients.


Instructions


  1. Bake pie shell as directed. Blanch and peel tomatoes, slice tomatoes ¼ to ½ inch thick and remove as much of the seed pulp as possible. All you want is the meat of the tomatoes.
  2. Let tomato slices sit on paper towel to drain.
    Combine the next 6 ingredients.

  3. Spread a portion of the cheese/mayo mixture in the bottom of the pie shell.

  4. Add a layer of tomatoes,

  5. Repeat the layering process so that the top layer is the Mayo mixture. Sprinkle the remaining chopped green onion on top layer of pie.

  6. Bake on a foil covered cookie sheet for easy clean-up in a 375 degree oven until golden brown (around 45 min)

Goes great with anything you’ve put on the grill!

Finally! A recipe using the boatload of basil I am harvesting.....besides pesto and caprese salad! Might try chopped cherry tomatoes since I always have a 'boatload' of those, too...
